So this turned out pretty well. We had had a pretty late night last night, and we didn't want to go out for food. We didn't have enough eggs for one of my famous omelettes so I decided to make this egg dish. Ingredient & directions below.
Ingredients were basically whatever I had lying around, and a bunch of eggs. Specifically:
- 5 eggs
- 2 tbsp chili powder
- 2 tbsp garlic powder
- 1/4 cup milk
- 1/4 cup flour
- 1/2 cup goat cheese
- 2 sausages (cooked)
- 1 average sized tomato
- 2 cups chopped spinach & greens
- 1 cup shredded cheddar
- Mix the eggs, flour, milk, chili power, and garlic powder in a bowl.
- Pour the egg mix into a baking dish and put it in the oven at 400F or 15mins
- Chop up the sausages, tomato, and leafy greens and mix them in a bowl.
- After about 15mins or so, the egg mixture should be firm on the bottom and a little liquidy on top.
- Break apart the goat cheese onto the top of the squishy eggs
- Add the sausage, tomato, & spinach mix on top of the eggs and goat cheese.
- Top the whole thing with the shredded cheddar
- Bake this for 15min at 350F
- Broil for 5min or until the cheese topping gets crispy
